Big news from the Mornington Peninsula! After a huge five-year transformation, the iconic Hotel Sorrento has officially unveiled its stunning redevelopment.

The beloved local institution, owned by the Pitt family since 1981, has evolved into a world-class boutique resort, setting a brand-new benchmark for coastal luxury in Victoria. Get ready to be wowed!

This multi-phase project, led by three generations of the Pitt family, has been a true labour of love. From its beginnings as a traditional pub, the landmark property has been reimagined into a fully realised resort destination. Following earlier stages that added luxury accommodation, a pool, and wellness facilities, this final reveal is the cherry on top. It includes a sophisticated New York-inspired Lobby Bar, a multi-use terrace with jaw-dropping sea views, state-of-the-art event facilities, and eight new luxury suites.

Redefining Coastal Luxury

This redevelopment isn’t just about a new look; it’s about creating a whole new experience. “The completion of this development isn’t just a milestone for us, it redefines what hospitality looks like on the Mornington Peninsula,” says Myles Pitt, Director at Hotel Sorrento. “We grew up in this hotel, and to now see it fully realised as a resort destination that offers world-class hospitality and wellness, is something we’re incredibly proud of.”

To add a touch of exclusive style, Hotel Sorrento has even teamed up with lifestyle fashion brand Venroy. They’ve created a limited-edition capsule summer collection of co-branded hats, towels, and beach bags, available only to in-house guests. It’s a chic nod to the resort’s relaxed yet refined coastal vibe.

A Look Inside the New Spaces

Get ready to explore the stunning new additions that make Hotel Sorrento a must-visit destination.

The Lobby Bar: A Touch of New York Glamour

Designed by Six Degrees Architects, the new Lobby Bar brings a sense of intimacy and sophistication. Inspired by legendary venues like The Connaught in London and The Bowery Hotel in New York, this low-lit space is all about modern elegance. With a blend of marble, travertine, and leather finishes, it’s the perfect premium area for guests to relax, connect, or work.

The bar focuses on creative cocktails and elevated snacks, including Hotel Sorrento’s signature roasted nuts, which come complimentary with every drink! It’s the ideal spot for a quiet morning coffee, an afternoon aperitif, or a pre-dinner cocktail, with service available all day.

The Terrace: Wellness with a View

Just when you thought it couldn’t get any better, there’s the new terrace. This open-air space is dedicated to wellness, complementing the hotel’s existing Marlo Spa. Set against panoramic sea views, it’s designed for pure rejuvenation. You’ll find premium Technogym equipment and a travertine yoga deck surrounded by lush greenery from landscape architect Fiona Brockoff.

By day, the terrace will host yoga and Pilates classes for guests. By night, during peak season, it transforms into a VIP area for drinks, offering what might just be the best view on the Peninsula. It’s the perfect balance of relaxation and indulgence!

Events and Gatherings Reimagined

The redevelopment also introduces purpose-built conference and event facilities for up to 104 guests. These spaces are equipped with premium AV technology, refined finishes, and seamless access to the Lobby Bar. This creates a sophisticated business-meets-leisure experience perfect for both corporate gatherings and private celebrations.

Bridget Bailey, Director at Hotel Sorrento, shares the family’s vision: “This final stage marks the completion of our family vision to be a world-class resort, while retaining our heart. Every space, every detail has been considered to enhance the guest experience, while staying true to the character and charm that has always defined us.”

A Legacy of Hospitality

Built in 1872, Hotel Sorrento has been a cornerstone of the community for over 150 years. The Pitt family has lovingly steered its evolution for over four decades, ensuring that its warm and welcoming spirit remains.

With 58 luxury rooms and suites, seven dining options, a 30-metre pool, a wellness spa, and premium event facilities, Hotel Sorrento now offers a complete resort experience. It seamlessly blends its rich heritage with contemporary design and modern coastal living.

“As a family, we are thrilled to provide an offering that reflects what we love,” says Marcus Pitt, Director at Hotel Sorrento. “Not only spaces for people to connect and celebrate, but also an opportunity to invest in their health and wellbeing.”

This dedication has not gone unnoticed. The hotel was recently recognised as Hotel of the Year: Metropolitan and Best Hotel Accommodation at the 2025 AHA (Vic) State Awards for Excellence, cementing its status as one of Victoria’s leading resort destinations.
