Sydney’s dining scene just got a little brighter with the opening of Watermans.
Nestled within the stunning One Sydney Harbour development at Barangaroo, this Eastern Mediterranean-inspired restaurant is set to become a must-visit destination for food lovers this summer.
After a big year that saw the launch of Eleven Barrack, co-owners Nick Hildebrandt and Brent Savage are ending 2025 on a high note with their return to Barangaroo.
The 120-seat venue, designed by Chris Grinham of H&E Architects and long-time collaborator Pascale Gomes-McNabb, offers a seamless blend of indoor and outdoor dining. The outdoor area features lush pergolas wrapped in greenery, while the interior boasts modern-luxe finishes, bespoke lighting, and an open kitchen with a custom wood-fired grill and oven.
At the helm of the kitchen is executive chef Darryl Martin, formerly of Barzaari, whose expertise in Levantine cuisine shines through in the menu. Brent Savage, co-owner and chef, shares his excitement: “The menu highlights the best of Australian produce with a strong emphasis on vegetable-forward dishes. Collaborating with Darryl has been a joy—I’ve long admired his work.”
The opening menu is a celebration of bold flavors and fresh ingredients, with standout dishes including:
- Hummus with green zhoug and mint
- Labneh with salted cucumber, pomegranate, and lemon jam
- Raw tuna with watermelon, yoghurt, and fig leaf oil
- Wood-fired scallop with pomegranate, brown butter, and sesame praline
- Whole wood-fired flounder with broad beans and smoked tomato savoro
- Lamb shoulder with harissa, black lime, cinnamon, and toum
For dessert, guests can indulge in creations like halva ice cream with date granita and must vinegar or brik bougatsa with cherry jam and aniseed sorbet.
