Located at the picturesque Manly Wharf, Felons Seafood is the latest venture by Felons Brewing Co., which built its reputation at Brisbane’s Howard Smith Wharves precinct. The new venue is under the direction of Artemus Group, co-founded by Adam Flaskas, who is also behind the transformation of Manly Wharf into a lively hub for community and culture.

Seasonal Menus Under the Leadership of Luke Bourke
At the helm of the kitchen is Luke Bourke, recently crowned The Sydney Morning Herald Good Food Guide 2025 ‘Young Chef of the Year’. Bourke brings his contemporary flair and Indigenous heritage to create seasonal menus focused on responsibly sourced Australian seafood.
“Our goal for Felons Seafood is to showcase honest flavours and exceptional produce in a thoughtful yet approachable way,” said Bourke. “We’ll be working closely with local fishers and growers to keep the menu fresh, simple, and grounded in the best of what our local waters and producers have to offer.”
Bourke collaborates on the menu with Corey Costelloe, former Rockpool culinary director and now culinary consultant for Artemus Group. Together, they bring a wealth of experience and a shared dedication to highlighting premium Australian seafood with a produce-driven approach.
