Come January, Sydney’s dining scene will reach new heights—literally and figuratively—with the highly anticipated arrival of Lottie, a contemporary Mexican rooftop restaurant and Mezcaleria.

Perched atop The EVE Hotel in Redfern, this culinary gem is set to be a lush oasis of vibrant flavours, bold design, and unparalleled ambience, redefining rooftop dining in the city.

An Elevated Escape

Lottie emerges as a dazzling retreat, offering an elegant yet effortlessly relaxed atmosphere that draws inspiration from both its surroundings and the rich traditions of Mexican cuisine. Designed by Sydney’s renowned George Livissianis and landscaped by Daniel Baffsky of 360 Degrees Landscape Architects, the space is as extraordinary as the food it promises to serve.

From the textural cayenne terrazzo and pink travertine tiles—a nod to Redfern’s rooftops—to lavish banquettes and thriving greenery framing the Sydney skyline, every detail has been meticulously considered. Adding to the restaurant’s year-round appeal is a retractable roof, ideal for soaking up the sun in summer or cosying up on cooler days.

A Fresh Take on Mexican Cuisine

Lottie offers a menu that’s as authentic as it is innovative, showcasing the shared Pacific coastlines of Mexico and Australia. Curated by Executive Chef Pip Pratt and his exceptional culinary team, the dishes balance nuanced, delicate flavours with the fiery heat of chillies, creating a dining experience that transcends your traditional notions of Mexican fare.

Expect a selection of snack-style dishes such as raw scallop with celery and apple, rockmelon and watermelon gilda garnished with Tajin, and beef tartare with sea urchin. For small plates, highlights include trout ceviche with tomato, geraldton wax, avocado and black habanero oil and prawn and carrot aguachile.

The main courses take things up a notch, all served with housemade tortillas pressed and warmed on a comal in full view of diners. Signature dishes include Murray cod pibil baked in banana leaf, a velvety smooth Swiss brown tamale with kombu bean broth, and a succulent beef chop dry-aged at Liquid & Larder’s central butchery. This careful attention to detail ensures a dining experience that is as much about theatre as it is about flavour.

Agave Dreams

At the heart of Lottie is an ethereal central marble bar, where patrons can sip on meticulously crafted cocktails inspired by Mexico’s finest agave spirits. Group Bars Manager Ben Ingall has curated an exceptional drinks menu highlighted by rare tequilas, mezcal, sotol and raicilla, alongside refreshing concoctions like the Espiritu Y Jugo, a harmonious blend of agave, lime and centrifuged juice.

Of course, no Mexican mezcaleria would be complete without its hero margaritas. Lottie will offer three varieties—a classic, a spiced, and a seasonal—all perfectly paired with the bold flavours of the food. For wine lovers, Group Sommelier Kyle Poole has assembled a compelling list of natural and biodynamic options, with light whites, complex orange wines, and smooth reds taking centre stage.

With a capacity of 107 seats, this rooftop gem accommodates all manner of gatherings, from casual walks-ins enjoying the central bar’s 27 seats to private celebrations in the 28-seat semi-private dining area.

Lottie is the brainchild of hospitality maestros Liquid & Larder, the exclusive food and beverage partners of The EVE Hotel. Co-founder James Bradey explains the ambition behind the project, saying, “We wanted to champion Mexican cuisine in a way that hadn’t been done before in Australia.
