Recipe: Beef rissoles by Three Blue Ducks Sydney

Preparation time: 20 minutes Cooking time: 20 minutes Serves: 4-6 Ingredients: 1 kg prime beef mince 200 g panko (or sourdough breadcrumbs) 200 g currants 150 g pine nuts, toasted 4 eggs 3 handfuls of flat-leaf parsley, leaves picked and roughly chopped 1 large red onion, finely chopped 2 tablespoons minced garlic 75 ml kecap manis 2 tablespoons chilli flakes 2 tablespoons smoked paprika 1 tablespoon salt flakes 2 teaspoons ground pepper Method: Preheat the barbecue grill on high. Mix all the ingredients in a large bowl until well combined. Roll the mix into rissoles of your preferred shape and size. Grill the rissoles for 3–5 minutes on each side, depending on how big you make them. Rest for 10 minutes covered with foil before serving.
