Stanton & Co. is shaking-up The Cannery, opening its doors in Rosebery Sydney

Just in case Three Blue Ducks, Archie Rose Distillery and Black Star Pastry weren’t enough for you in Rosebery, there’s a new player to the game.

Stanton & Co. has opened its doors this month, showcasing fine fare in contemporary Australian style.

By the Parlour Group, the new restaurant will live in The Cannery, taking some industrially-inspired cues from its surroundings and working to the tune of good dining, drinking and cooking. Click here to see the menu.

Leading the kitchen and the man behind the menu is executive chef Regan Porteous, whose tenure in Sydney’s beloved Toko on Crown Street, Tequila Mockingbird and many other venues has already put the place in good stead. Along with head chef Marcelino Papio, they plan on demonstrating the best contemporary Australian cuisine with a Japanese twist.

“With contemporary Australian cuisine, it’s all about letting the produce speak for itself, while adding complexity through texture, technique, and tastes that play on a diner’s palate,” said Regan.

Regan’s love for Japanese technique, combined with a passion for contemporary Australian, is reflected heavily in the dishes, like the ‘tuna tartare, puffed rice, cured egg yolk, rice cracker’, ‘Morton bay bug tempura, bottagra, ponzu mayo’ and ‘crispy pork knuckle with a seeded soy mustard’.

At the new Stanton & Co., there are two menus available. The fast, fresh and a la carte for lunch and a more extensive, shared concept for longer lunches and dinner; all of which are served along an impressive cocktail selection, approachable and balanced wine list and premium craft beer.

Stanton & Co. opened in November.

Wednesday – Saturday: 12pm-12am; Sunday: 12pm-10pm
