Wednesday truffle wheels at Salt Meats Cheese is a steal

There’s a little place in Broadway in Sydney that you need to add to the list.

It’s called Salt Meats Cheese and they do easy, quick, delicious, accessible Italian food – think pizzas, pastas and cocktails alongside wine – that on Wednesdays offers something altogether unique.

The ‘truffle wheel’ comes out on Wednesday evenings, which is the biggest possible wheel of truffled pecorino from Sardinia, Italy, that acts as the garnishing bowl for some freshly three-cheese-cooked pasta that only becomes more delicious with every scoop. It’s out of control.

Served with grated truffle pecorino by a lactose-intolerant waiter (the cruelest irony of all), the restaurant has taken what it means to create cheese pasta to the next level.

The dish is then garnished with pepper and chives before your heart stops with excitement. It’s a must.
