100g scallops

1 cup coriander

1/2 cup Lime juice

1/2 fresh Jalapeno chilli

1/4 sliced red onion

1/2 cup cucumber

Pinch of Salt

Pinch of Black pepper



  • For the scallops: slice scallops thin, about 3 slices per scallop.
  • Season with extra virgin olive oil, salt and lime juice.
  • For the lime broth, mix the coriander, lime juice and jalapeño chilli. Season with salt and pepper.
  • Place the seasoned scallops, cucumber and red onion on bottom of the plate alternating them.
  • Add the lime broth, garnish with the sliced red onion, micro coriander.
  • Finish with sea salt.
