Koi Dessert Bar pear spring fruits cake

Recipe: Koi Dessert Bar’s spring fresh fruits pear cake

Cooking time: 40 minutes

Preparation time: 45 minutes

Servings: 1

 

Ingredients:

  • 500 g pear puree
  • 150g sugar
  • 800g soft pear cream
  • 150g milk chocolate
  • 15g gelatin leaf

Method:

  • Mix sugar and pear puree until warm (do not bring to a boil)
  • Soak gelatine in ice water to make it soft
  • Once gelatine is soft add it to the mix
  • Add chocolate
  • Let cool
  • Once cool, add cream

Pear filling ingredients:

  • 5 pears (peel, cut, and diced)
  • 1/2 lemon juice
  • 2 tbs sugar
  • bake in oven for 4 min temp 160 C and set aside
  • 500g pear puree
  • 60g sugar
  • 100mL water
  • 5g agar

Melt pear puree with sugar and water until hot, add agar, bring to a boil, mix the diced pear which was set aside, place mix into pear shaped mould, freeze,

Assembling:

Fill the centre of the pear mould with pear filling

Garnish: 

Melt white chocolate 350 G, grape seed oil 500 G, and green and yellow food colour.

Colour pear and add chocolate stick
