March into Merivale and the Chandon Pop-Up

Even a born-and-bred Melburnian like me knows that if there’s one word you associate with Sydney hospitality, it’s Merivale.

Some of the city’s most glamorous night spots and best restaurants sit under the Merivale umbrella: we’re talking The Beresford, Establishment, Uccello, the Coogee Pavillion, Mrs G’s and of course The Ivy.

It’s at The Ivy that Merivale is inviting you to toast to your week with a glass of bubbly in the exclusive Chandon pop-up bar.

Running only for the duration of the March into Merivale festival – that’s just until the end of this month! – the pop-up bar gives you the chance to work your way through an amazing list of Chandon’s best vintage sparklings while nibbling on oysters and taking in some live entertainment.

Perfect, right?

Even if you ignore everything else and focus on the wine list, you can’t go wrong. There’s a great selection of Chandon’s sparkling wines here, from the 2005 Tasmanian Cuvee to the more recent 2010 Cabernet Sauvignon from Argentina. And if that’s all Greek to you? Grab yourself a cocktail. Everything from chocolate bitters to yellow Chartreuse gets blended with bubbly, so you can go for something a little stronger if you’re game or keep to the sparkling if it’s a school night.

While you’re sipping you may want to do a little munching, so order some scrumptiously fresh oysters or get a cheese platter to share. If you want something all to yourself, the arancini with fennel and sage is delicious, as is the caviar – who could resist the opportunity for caviar and Chandon in the middle of their week?

Before you go, don’t forget to hop in the free photobooth, and make sure you stick around long enough to see a performance by the incredible live singers. With the pop-up bar being a throwback to the sixties and seventies, there’s no better way to end the night than with selections from the Dreamgirls soundtrack or Aretha’s best hits. And if you find the next day that you’re in the mood for a tipple again, don’t stress – the bar is open all week. Cheers to that!
