New hot spot restaurant Husk & Vine opens in Parramatta

When people think of Parramatta, they don’t often associate it with fine dining and great food. This is about to change.

Husk & Vine Resturant is the latest addition to the new multi-billion dollar revamp of Parramatta City and it’s here to shake things up a bit out west.

Located just below the new 5-star hotel, SKYE Suites (which will be opening shortly), Husk & Vine will be the first in the district with an elevated menu of modern middle eastern food.

During the process of building Husk & Vine, excavations were discovered of a previous hotel that stood there over 200 years ago. The ruins that are now displayed outside of the restaurant for diners to see, become one of main the inspirations behind the design of Husk & Vine.

The interiors are a beautiful balance of timber, leather and linen inspired by villages in the Middle East. Meanwhile, it is a clashing of cultures and aesthetics in-one, thanks to its sandstone accents similar to those of the hotel before it is suspended from the ceiling. This combined with the comforting food of the middle east, creates a luxurious yet approachable vibe of being a beautiful Middle Eastern village.

Lead by Head Chef Ashley Brennan, Husk & Vine’s menu could be described as an ethnic mix of delicacies. Although predominately Middle Eastern, the menu also takes inspiration from French, Italian and many other cultures, reflective of the diverse population of Parramatta.

Some highlight dishes to try is the Jerusalem artichoke & black truffle soup, crispy lamb ribs with labneh and the pistachio & raspberry bombe alaska.

To complement these dishes, Hush & Vine’s drink list contains a mix of boutique wineries from Australia and abroad. And if a cocktail is more your taste, you won’t be disappointed with an array of cocktails infused with Australian native ingredients like lemon myrtle and eucalyptus.

Close to the train station and only 200 metres away from Parramatta square, Husk & Vine is just a taste of what’s to come for the future of dining in Parramatta and out west.
